We source the cheese for our specialities from our Schweineberg alpine dairy near Ofterschwang.
The production of hay milk is the most original form of milk production. The quality of the cheese specialities begins with the feeding of the cows. As it has done for over 180 years, the Schweineberg alpine dairy sources its hay milk exclusively from local mountain farming areas. There, the dairy cows are fed according to the seasons: in summer, the cows graze on fresh pastures. The meadows are mowed, the grass is dried and the hay obtained in this way is used as feed for the cold season. Six farmers currently supply the high-quality hay milk, which is processed fresh daily on site.

Our home is the Allgäu region, and our passion is the production, packaging and distribution of high-quality cheese specialities. Since 2023, we have been working in our modern company building in Kimratshofen, where all areas – from development to production – are united under one roof. Here, we not only mature, cut and package our own ‘Herz’ products, but also take on packaging for external cheese dairies and trade customers.
